Its a Sunday.. a day to relax so i guess i don't have a tip for you but would definitely like to say something.
Sunday a lazy day all round, but we can still do a lot of things can't we like writing up this blog, getting ready to make brunch.. something between the breakfast and the lunch.
This idea of a brunch is fantastic.. when it leaves most of the afternoon free to follow your hobby.
Like picking up a book you wanted to read for a long time but didn't have the energy or the time to do so.
And finally guys ever tried eating steamed Idli's with Mutton curry? If you think its weird... I guarantee you will have your audience smacking their lips if you give them something like that..
May be I can entice you with a recipe for the curry so that you can try making it.. I love food and try to come up with winning combination this is one of those.
For the curry:
1 kg mutton (goat's meat)
4 big onions (two diced finely, and the remaining two just sliced)
6-7 green chillies slit
A small cube of fresh coconut just enough to make the base thick..
4-5 cashews
2-3 tbsp of fresh coriander leaves
1tsp turmeric powder
1tsp chilly powder
1tsp coriander powder
1tsp cumin powder
1/2 tsp of pepper powder
1 tsp of garam masala (5 spices powder that includes cinnamon, cloves, black pepper, star anise and nutmeg)
1 big lime
Salt to taste
Method:
Dry roast the sliced onions, the coconut, coriander leaves, chillies, cashews together while continuously stirring so that they don't burn. Once done, allow them to cool and then grind them together into a fine paste
Wash the mutton thoroughly first and then add the turmeric powder, chilly powder, coriander, cumin and pepper powder to it. Mix the mutton completely so that the spices coat the pieces finely. Squeeze a lime over it and keep it aside for sometime.
In a small wok pour the oil (if the mutton has a lot of fats then use very less refined oil). Heat the oil and then add the diced onions. saute them lightly till pink then add the paste you made earlier to the wok. Mix it thoroughly and keep frying till the paste starts leaving the sides of the wok. Once its done add the mutton to this and mix so that both the mutton and the paste form a sort of a curry , then add a little bit of water to this (depending on the kind of curry you want).
You have an option to put all this in a pressure cooker and pressure cook for 15-20 min. For the ten min cook on high flames and then lower the heat an allow to cook.
Once done let the pressure release before you open the cooker. After that test it to check if completely done.
Serve it with hot steaming idli's.
P.S you can use the same recipe for chicken if you love that more. However take care not to pressure cook chicken as your liable to get just bones as the meat for almost dissolve. Chicken does not take long to cook. If you are a veggie u can always use potatoes,cauliflower and peas or any combination of these three.

ReplyDelete3 tbps oil is not considered oil for a 1 kg meat or chicken... neway if the meat has a lot of fat you can do without oil too...
How about cooking and giving that to me.... i dun think i have that much patience to make and eat it myself ;)
